Unique Lentils and Rice
1 medium onion
2 cloves garlic
1 cup chopped tomato
2 cups sugar snap peas
2 cups water
¼ cup fresh chopped parsley
½ cup dry lentils
½ cup rice
½ teaspoon salt
Chop onions and garlic.
Pour olive oil in stir-fry style pan and heat on medium.
Saute onions and garlic in oil until golden.
Add 2 cups water.
Add rice, lentils, salt, and parsley.
Cook for 20-25 minutes, or until rice is done.
Garnish with tomato, and surround with sugar snap peas.
