
One Meal Vegetable Dish
3 c fresh green beans
2 c carrots cut into rings
1 1/2 c cauliflower cut into small chunks
1/4 c fresh green onion tops
1 c water
1 c whole shelled almonds
1/2 t Vegex or vegetable broth
2 T of corn starch with a little water (only if needed to thicken)
Saute onion in a little oil.
Add green beans and cook with onions and 1/2 of water for 5 minutes.
Add carrots and cook for another 5 minutes.
Add cauliflower and cook until all vegetables are tender.
Add almonds, seasoning, and cornstarch mixture.
Serve when veggies are still crisp.
